Description
Light cherry red in colour showing vibrant cherry, wild strawberry, hints of earthy mushroom and forest floor. Light, delicate flavours balanced acidity and with silky tannin leaving a lovely savoury finish. Enjoy at room temp or chill it in warmer months.
Handpicked Pemberton Pinot Noir, fermented with 30% whole bunches for complexity. Cold soaked to extract colour then lightly foot trod and pumped over for 15 days before pressing to seasoned puncheons. A short maturation of 8 months before being filtered and bottled. Light oak handling and delicate handling during ferment has resulted in a delicate, yet flavourful wine with elegance and bright fruit.

Very hot dry conditions over spring led to an un-precidented early vintage kicking off 4-6 weeks earlier than ever recorded.

Sourced from Bellarmine vineyard in Pemberton from cane pruned droopy clone Pinot Noir
- Winemaking
Handpicked fruit, chilled overnight then partially destemmed and layered with 30% wholebunch in stainless steel vat. Cold soak for 3 days then gently pigeaged. Pumped over twice per day, moving to once per day as ferment progressed. Pressed using basket press to seasoned puncheons for 8 months.
