"Ants Pants" Cabernet Sauvignon

Ripe blackcurrant and mulberry with hints of dark chocolate, black olive and bayleaf. Elegant, mouth filling tannins, bright acidity balanced with dense fruit and perfectly balanced oak. This is the epitome of a Margaret River Cabernet.

2023 was a stunning growing season, particularly for Cabernet in Margaret River. A single vineyard wine, these grapes were sourced from the renowned Wilyabrup subregion, planted on gravelly loam. The grapes were harvested using a selective machine to remove any unwanted material or damaged berries. The grapes were then passed over a sorting table into an open stainless steel tank for fermentation. The ferment reached a peak of 28℃ and was plunged twice a day while active and less as the alcohol increased. The wine had some extended skin contact over a period of 21 days before being pressed to new and seasoned French oak puncheons. The wine was matured over 12 months before only the best barrels were selected.
