Description
Lifted aromas of green apple, lemon rind, nougat and cut hay. Delicate flavours balanced by a long acidity and a mouth-filling, fine bead. One for celebrating or on a Monday night just coz!
About the name: Pipsqueak was yet another nickname for our beloved Pip aka "Birdie".
The Chenin Blanc was sourced from a stunning Wilyabrup vineyard. Hand picked to retain optimal acidity and flavour. Timing was everything. Whole-bunch pressed, chilled and settled in tank with only the free-run retained. Fermented cold with a neutral yeast and stirred on lees after ferment to build texture. Tiraged and left on lees in bottle for 10 months. Disgorged and dosaged with 3g/L sugar and minimal sulphur dioxide – just enough to balance the acidity.
