"Spin the Bottle" Shiraz Viognier

Spin the Bottle is an elegant wine bursting with ripe purple fruits, dark chocolate, dried thyme and lifted florals. Smooth and opulent, well rounded with fine tannins subtly integrated charry oak. This wine will age well over the next 5 to 7 years.

About the name: Another childhood favourite game of truth or dare, that quite often ended with doing something you didn’t want to do.

Sourced from the rolling hills of Donnybrook, with co-fermented with 3% Viognier from Margaret River. Picked at optimal ripeness, the shiraz was destemmed and fermented in open vats with wild yeasts. Fermented at high temperature to extract maximum tannin, then left on skins for a further two weeks. A very tricky wine to perfect because the Viognier was well and truly ready by the time the shiraz was ready to pick. Matured in 25% new and seasoned puncheons for 12 months.
